Prepare the coating: in a shallow dish, pour the breadcrumbs. In another shallow dish, beat the eggs until well mixed.
Take each rolled wrap and first dip it into the beaten eggs, allowing any excess to drip off. Then, roll it in the breadcrumbs, ensuring that it is fully coated for maximum crunchiness.
Preheat your air fryer to 375°F (190°C). While it's heating up, lightly spray the air fryer basket with olive oil to prevent sticking.
Arrange the prepared wraps seam-side down in a single layer in the air fryer basket, taking care not to overcrowd them. Lightly spray the tops of the wraps with olive oil spray for an even crisp.
