Instructions
Begin by bringing a large pot of water to a rolling boil. Once boiling, add the ramen noodles and cook them for about 3-4 minutes or until they are tender but still firm (al dente). Drain the noodles in a colander and set them aside.
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the sliced chicken breast to the skillet and stir-fry for approximately 5-7 minutes, or until the chicken is cooked through and has a light golden color. Once cooked, remove the chicken from the skillet and set it aside on a plate.
In the same skillet, add the remaining tablespoon of sesame oil. Once hot, add the minced garlic and ginger, stirring vigorously for about 30 seconds until fragrant and aromatic.
Next, add the sliced bell pepper, broccoli florets, and julienned carrot to the skillet. Stir-fry the vegetables for about 3-4 minutes until they are vibrant and tender-crisp, ensuring they maintain some crunch.
Return the cooked chicken back into the skillet containing the vegetables and toss everything together to combine.
In a separate small bowl, mix together the soy sauce, honey (or maple syrup), rice vinegar, and the cornstarch slurry. Pour the sauce over the chicken and vegetables, stirring everything together to ensure it is evenly coated. Allow it to cook for an additional 1-2 minutes until the sauce has thickened slightly.
Carefully fold the cooked ramen noodles into the skillet, ensuring that they are well combined with the chicken and vegetables. Gently mix everything until the noodles are fully incorporated into the dish.
Serve your Chicken Ramen Stir Fry hot, garnished with freshly sliced green onions and a sprinkle of sesame seeds for added crunch and flavor.
