Instructions
Preheat your oven according to the package instructions for the tater tots, typically to around 425°F (220°C). Spread the frozen tater tots in a single layer on a baking sheet and bake for approximately 25-30 minutes until golden and crispy.
While the tater tots are baking, heat a skillet over medium heat. If using ground beef, brown it until fully cooked, breaking it up with a spatula. If using black beans, heat them in the skillet. Season with taco seasoning, salt, and pepper, mixing well and cooking until heated through.
On a clean surface, lay out one large flour tortilla. In the center, layer 4-5 crispy tater tots, followed by a scoop of the seasoned meat or beans. Sprinkle shredded cheddar cheese on top, add a dollop of sour cream, and finish with salsa.
Add shredded lettuce and diced tomato on top of your filling for freshness and crunch.
Fold in the sides of the tortilla over the filling, then roll it from the bottom up tightly to create a burrito, keeping the filling secure.
Continue the assembly process for the remaining tortillas and fillings until all burritos are made.
In a clean skillet, heat a small amount of cooking oil over medium heat. Place the burritos seam-side down and cook for 2-3 minutes until golden brown and crispy. Flip carefully and repeat on the other side.
Once all burritos are browned, remove them from the skillet and allow to cool for a minute before slicing in half for serving.
Notes
Serve with extra salsa and sour cream for dipping. Garnish with cilantro or green onions for added freshness.
