Mix the Filling: In a large mixing bowl, combine the shredded chicken, softened cream cheese, shredded cheddar, chopped green onions, garlic powder, ground cumin, salt, and black pepper. Stir everything together until the mixture is smooth and well-blended.
Soften the Tortillas: Place the corn tortillas in a microwave-safe dish and cover them with a damp paper towel. Heat them in the microwave for about 30 seconds.
Fill the Tortillas: Take one tortilla and lay it flat. Spoon about 2-3 tablespoons of the chicken and cheese mixture along the edge of the tortilla.
Roll the Taquitos: Carefully roll the tortilla around the filling, starting from the edge with the mixture, and tuck in the sides as you go to seal in the filling.
Prepare for Baking: Line a baking sheet with parchment paper to prevent sticking. Place the rolled taquitos seam-side down on the baking sheet. Lightly spray the tops with cooking spray.
Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the taquitos are golden brown and have become crispy.
Cool and Serve: After baking, remove the taquitos from the oven and allow them to cool for a few minutes before serving.
